One obvious question - will you have a vehicle that can go down the back country roads, basically a high clearance vehicle? Otherwise, I would do the short hike into Boquillas Canyon. There is a tall sand bank with a cave on top the kids should enjoy. You need to drive up into the Basin and check it out. Go to Terlingua and check out the "ghost town". The drive from Lajitas toward Presidio is very impressive with large mountains on the Mexican side of the Rio Grande. While on the west side of the park Santa Elena Canyon is a must to see.
